Sueño Rooftop is a stunning Latin American-inspired bar by the savvy Rick Shores team, located on the Gold Coast Highway side of The Oxley precinct at Nobby Beach.
Entry to Sueño is via the ground floor, with the option to take the elevator or red spiral staircase, via sibling and first floor restaurant, Norté.
As you would expect from the Rick Shores peeps, everything at Sueño Rooftop is on point, from the sleek designer fitout to the bespoke food, premium drinks and friendly first class hospitality.
Sueño has a variety of spaces to pull up a seat and enjoy the offerings, with a choice of umbrella-shaded pebbled and tiled terraces at either end, a sprawling central covered area under striking gold louvred skylights, with a sleek bar in the middle and an open kitchen near the entrance.
Featuring stylish striped bar stools in beach tones with circular cushion backs and chunky wooden or marble topped tables tables, as well as exquisite earthernware crokery and linen napiery, Sueño ticks all of the boxes when it comes to design.
The exquisite Latin-American flavoured menu is a match for the decor, starting with freshly shucked oysters with aji, lime & cactus vinaigrette or Queen scallop with jalapeno, apple, cucumber and coriander oil.
Must-try is the ceviche, served with house-made tostadas and with a choice of Hiramisa kingfish. avocado, leche de tigre, chilli & kombu oil; Ora king salmon, prickly pear, chilli and lime coriander or Moreton Bay bug, pequin chilli mayonnaise, jicama & apple.
Tacos & tostadas include mushroom tostada, black mole, smoked coconut yoghurt & macadamia; or Moreton bay bug 'al pastor' with pineapple & chilli emulstion, while picada/skewers include charcoal chicken with buttermilk, habanero & spring onion; or King salmon with burnt spring onion.
For something more substantial, there's a selection of asados (including Fremantle octopus, roasted bone marrow & guajillo; chargrilled Ballina prawn, mango & habanero hot sauce; BBQ pork carnitas, Mexican onions & coriander; or buttermilk fried chicken, paw paw adobe & chilli mayonnaise), all served with table tortillas and accompaniments. And for dessert there's a choice of classical caramel flan or smoked agave pannacotta.
When it comes to drinks, it's hard to go past the signature cocktails, created to perfectly match the food, such as Carolina (gin, rhubi mistelle, coconut verjus & yellow chartreuse); Siente Mi Amor (vodka, peach, strawberry, lemon myrtle & foam); or Bucho (pisco, blanco, charred pineapple & jalapeno). Otherwise classics are available on request.
On the wine list are a boutique selection of Australian, Chilean and Argentinian wines and French champagne while beers on tap include Chanco Cervez, Heads of Noosa Lager and Stone & Wood Pale Ale.
